Best EVER Chocolate Chip Cookies!
Chocolate chip cookies:
- 2/3 cup light brown sugar, firmly packed
- 2/3 cup granulated sugar
- 1 cup salted butter (unsalted if you like them less salty/"caramel" flavored)
- 3/4 Tablespoon salt
- 2 teaspoons vanilla extract
- 1 Tbs pure maple syrup
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 large egg
- 2 cups Bread Flour OR
- 1c Bread Flour, + 1c. Pastry Flour
- 1-1 1/2 cups semisweet chocolate chips*
INSTRUCTIONS
- Preheat the oven to 375°F.
- In mixer, combine the sugars, butter, salt, vanilla, maple syrup, baking powder, and baking soda, beating until smooth and creamy.
- Beat in the egg, again beating until smooth. Scrape the bottom and sides of the bowl with a spatula to make sure everything is thoroughly combined.
- Mix in the flour, then the chips just until wet.
- Use 3 tablespoons to scoop balls of dough onto silpat covered baking sheets, leaving 3" between them on all sides
- Bake the cookies for 8-10 minutes.
- Remove the cookies from the oven, and cool on the pan until they've set enough to move without breaking. Repeat with the remaining dough.
TIPS:
* You can use 1/2 butter and 1/2 cream cheese for a softer, less buttery cookie.
* This recipe is best after leaving dough in fridge overnight and then baking.

Let them sit for 10 min on silpat/cookie sheet and they settle to look like this^ |
