Italian Bread Pudding
Soak 1/4c. raisins in rum overnight
Tear up 2-3 loafs of Brioche (Whole Foods has thee best!!) and add to 13 X 9" pan
Sprinkle Rum Raisins on top
Whip together and pour over mixture:
2 eggs
1/2 tsp Trader Joes Bourbon Vanilla extract
3/4 c. sugar
1 tsp. cinnamon
1/2 tsp nutmeg
1 c. heavy cream
Cook at 350* for 30 min-1 hour uncovered
Meanwhile, in saucepan, boil, stirring constantly:
2 egg yolks
1 1/2 c Brown sugar
1/2 cup Amaretto
Pour over bread and ice cream if you wish (add rum raisin haagan daaz ice cream on top)
and bread after serving!
INCREDIBLE!
