Parker House rolls



1 1/2 c. milk + 1 1/2 tsp lemon juice OR 1 1/2 c BUTTERMILK
10 tsp yeast or 4 pkgs
1 1/2 stick butter
3/4 c sugar
1/2 c warm water
3 Lg eggs, lightly beaten
1 1/2 tsp. salt
6 cups flour


1. Dissolve yeast in warm (NOT hot or cold) water, let it sit until foamy (5 minutes)
2. IF making buttermilk: Bring milk to simmer, remove from heat, add in lemon juice until it separates
3. Add butter, sugar & let COOL
4. Combine milk mixture, eggs, yeast, salt & 1/2 Flour in KitchenAide Mixer with Dough attachment and mix until dough balls forms. add 1/2 c. flour at a time...
<---important cools="" it="" p="" that="">5. Remove and put on knead cycle in bread machine
<---important cools="" it="" p="" that="">6. Place in greased glass bowl, cover with hot rag and let rise in warm place until doubled 1 hr.+
<---important cools="" it="" p="" that="">7. On floured surface, roll dough into balls. Place on silpat baking sheets and let rise for 1 hour.

Bake at 350* for 20 minutes.
Remove from oven and brush with melted butter
